Marinated Roasted Teriyaki Chicken

The best meals are delicious and easy to put together when you need to get dinner on the table fast. Sometimes that means doing some prep the day before or morning of. This is one of those great meals. It takes a little time to make the marinade, but that is the most effort you will need to exert.

Marinated Roasted Teriyaki Chicken

Ingredients

2 to 3 pounds of chicken thighs

½ cup of vegetable oil

½ teaspoon sesame oil

½ cup of soy sauce

½ cup of rice vinegar

½ cup of honey

3 Tablespoons of brown sugar

1 Tablespoon of minced ginger

1 Tablespoon of onion powder

1 clove of garlic, minced

Juice of 1 lime

1 ½ cups of water

¾ cup Wegman’s Organic Teriyaki sauce (gluten and lactose free), plus more reserved for after cooking.

sesame seeds, optional

Directions

Mix together vegetable oil, sesame oil, soy sauce, vinegar, honey, brown sugar, ginger, onion powder, garlic, lime and water. Marinate chicken in mixture for 4 hours to overnight. Preheat oven to 375 degrees. Discard marinade, rinse chicken and then pat dry. Spray roasting pan with non-stick spray. Pour 3/4 of a cup of teriyaki sauce into a shallow bowl. Coat each piece of chicken with sauce and plan in pan. Cover pan with foil and cook for 20 minutes. Uncover, turn heat up to 400 degrees and cook for another 25 minutes. Use a meat thermometer to ensure each piece of chicken is cooked through. If you want crispy skin on the chicken, place under broiler for 2 minutes.

Serve with rice and broccoli.

You never have enough chicken recipes in your repertoire!

Honey Lemon Roasted Chicken Thighs

Chicken again? Definitely! I have been making a version of this roasted chicken recipe for years. It is SO EASY. It only has 6 ingredients, including salt, pepper and olive oil! I make it to entertain with or just on a weeknight for my family.  This feeds my family of 5 with enough for leftovers! Bonus, if you keep scrolling, I have a great recipe to transform the leftovers.

Honey Lemon Roasted Chicken Thighs

Ingredients

  • 3 pounds chicken thighs
  • ¼ cup lemon juice
  • 3 Tablespoons honey
  • 1 Tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400 degrees.
  2. Dry off the chicken thighs.
  3. Whisk together lemon juice, honey and olive oil in a medium sized bowl.
  4. Coat chicken with mixture and place in a roasting pan.
  5. Cook covered for 20 minutes, rotate pan and then cook for 30 more minutes uncovered.

Recipe Notes

Serve over rice, zucchini noodles or your favorite pasta. Reserve some of the pan juices to make a sauce with leftovers.

To keep it simple, I recently served this with a new favorite product from Wegman’s, 90 Second Steamables, Savory Long Grain and Wild Rice, which one of my 6 year olds made by himself (2 bags for our family) and microwave in a bag green beans, which the other 6 year old made. The clean plate club was full that night!

This also made an incredible leftover dish based on an old favorite from Bertucci’s, Chicken Broccoli and Rigatoni in Cream sauce. I used the juices from the roast chicken above with a dash of pepper and some milk for the sauce. You could easily substitute broth for the milk to make this dairy free. Heat the juices and keep adding a little milk at a time, until it tastes the way you want it. Cut up the remaining chicken and a head of broccoli. Toss everything together with your favorite pasta and it is a delicious meal!

What ways to do you like to cook chicken? How do you use your leftovers? We learn from each other, so comment and let me know!

Balsamic Honey Mustard Slow-Cooked Pork Loin

School vacation is over!! While there have been weeks in the past where I have felt sad that school vacation is over, this time, as I drove away, I turned up the music and was literally dancing in my seat! (Sing Justin Timberlake’s, “Can’t Stop the Feeling” when you read that paragraph) Anyway, now back to the routine of cooking and writing (and lots of laundry).

Using your slow cooker is always a great way to have a delicious meal waiting for you when you get home. I especially like to use it on Saturdays when we are running around with errands, parties and basketball games. The aroma that awaits when walking in the door is heavenly.  This pork loin is comfort food at its best. I kept this easy and served it with polenta and microwaved frozen peas on the side. A gorgeous comfort meal with very little effort!

Balsamic Honey Mustard Slow-Cooked Pork

Ingredients

3 to 4 pound pork loin

1 ½ teaspoon salt

¼ teaspoon of ground black pepper

1 teaspoon dried thyme

1 ½ Tablespoons of olive oil

4 medium shallots, diced

2 cloves of garlic, minced

½ teaspoon of salt

¼ teaspoon of pepper

2 cups of beef stock

2 Tablespoons balsamic vinegar

2 Tablespoon Worcestershire sauce

2 Tablespoon agave syrup

1 Tablespoon of honey mustard

Directions

Rub the salt, pepper and thyme all over the pork loin. Heat olive oil in a large skillet. Sear the pork loin on all sides.

Place pork in your slow cooker.  Add shallots, garlic, salt and pepper. Sauté for about 5 minutes.

In a measuring cup, mix together stock, balsamic vinegar, Worcestershire sauce and agave. Pour mixture into skillet with the shallots and garlic, mix and cook for 5 more minutes. Pour liquid, shallots and garlic over the pork in the crock pot. Rub the honey mustard on the top of the pork loin. Cook on high for 1 to 2 hours. Turn slow cooker down to low for 4 to 6 hours. Or cook it on low for 8 to 10 hours.

Gravy

Ingredients

Cooking liquid from slow cooker

3 Tablespoons of balsamic vinegar

1 Tablespoon agave syrup

2 Tablespoons of cornstarch

2 Tablespoons of softened butter

Directions

Pour all the shallots, garlic and liquid from the slow cooker into a high sided skillet after the pork is done. Bring to a boil. Add the balsamic vinegar and agave. In a small mug, combine the butter and cornstarch. Whisk the butter and cornstarch mixture into the gravy. Cook about 5 minutes until thick. Pour through sieve into your favorite grave boat (I like to use a travel coffee mug! keeps it warm.)

Carrot Ginger Soup

Even though the weather seems to be getting warmer (wishful thinking that spring is near!) soup is still a great comfort. Especially, this light, delicious soup (which is vegan and gluten free if you need it to be). It is a great lunch with grilled cheese or perfect starter for you Easter dinner.

Carrot Ginger Soup

Ingredients

2 Tablespoons of vegetable oil

½ teaspoon of sesame oil

1 large sweet onion, sliced

2 cloves of garlic, minced

1 inch of fresh ginger, minced

5 to 6 large carrots, diced

1 ½ teaspoons of salt

¼ teaspoon of pepper

5 ½ cups of chicken or vegetable stock

Sour cream or plain greek yogurt, optional

Directions

Heat oils in a stock pot. Add onions, garlic and ginger. Stir and cook until the onions are translucent, 5 to 7 minutes. Add carrots, salt and pepper. Stir and cook for another 5 to 7 minutes. Add the stock and cook for about 15 to 20 minutes. Blend with a handheld blender or allow to cool and transfer to a blender or food processor to puree. If there are lumps, run through a sieve. Keep in stock pot on low heat or in a crock pot on warm or low until ready to serve. Top with a dollop of sour cream or yogurt if you like.

Spring will be here before we know it! With a slight chill in the air, soups make an easy, healthy lunch, served with a salad or sandwich. Let me know if there are any recipes you want to see for the spring!

Here are some of my other soup recipes if you are in the mood for something different.

Spatchcocked Herb Roasted Chicken

Roast chicken is a great, easy comfort food for these cold winter nights after shoveling, playing in the snow or running around all day. I decided change it up a little and try spatchcocked chicken. This was my 2nd attempt. The first attempt was not so successful. I cooked it on a bed of roasted veggies and after 70 minutes on 375, the inside was still raw! I ended up have to throw out the veggies and just saute the chicken. Second attempt I roasted flat on the roasting pan and upped the temperature to 400. Spatchcocking definitely doesn’t save time, but it did cook evenly.

Herb Roasted Spatchcocked Chicken

Ingredients

1 – 8 to 12 pound chicken, spatchcocked (here is a tutorial from Martha Stewart)

4 tablespoons of olive oil, divided

1 teaspoon dried rosemary

½ teaspoon dried thyme

½ teaspoon black pepper

1 teaspoon of salt (leave out the salt if you brined the chicken)

Directions

Preheat oven to 400 degrees. Drizzle 2 Tablespoons of the olive oil in the bottom of your roasting pan. Pat chicken dry with paper towels and place chicken, breast side up on the roasting pan. Rub remaining olive oil on the chicken. If you still have the packet of chicken livers/heart and neck, take them out of the paper and place next to the chicken (trust me, even if you don’t like eating those parts, they make the gravy SOOOO good!). Spread the herbs, pepper and salt (if using) all over the chicken. Roast for 75 to 85 minutes, turning the pan once about 30 minutes in. Check with a meat thermometer to ensure it is cooked through (165 to 170 degrees and juices run clear). Place on serving platter and cover with foil while you make the gravy.

Pan Gravy

Ingredients

Pan drippings from roasted chicken

3 Tablespoons of balsamic vinegar

1 ½ cups chicken stock

2 Tablespoons maple syrup

1 Tablespoon of spicy brown mustard

1 Tablespoon of corn starch

2 Tablespoons of butter

Directions

Place the roasting pan over two burners on medium-low. Add the vinegar, chicken stock, syrup and mustard to the pan drippings and whisk together.  Keep liver, heart and neck in the pan, while mixing these flavors together. Let simmer for about 5 minutes. Remove the liver, heart and neck and whisk in the corn starch and let it cook for 5 more minutes. Then add the butter. Pour through strainer before serving if you have lumps.

This is great with gnocchi mashed potatoes, or polenta. These green beans or peas would round out the meal!

I really enjoy sharing with you what I cook for my family. It is something that brings me a lot of joy. It makes me even happier to know that others are reading and enjoying the blog. Thanks to Mamapedia for profiling me this week!! Please let me know know if you want to see anything or have a family recipe that needs to be made gluten free.

Gnocchi

Potato gnocchi is one of my favorite foods! It is so versatile. It can be the star of the meal or the great accompaniment to your favorite roast. You can toss it in any sauce you like. Tomato, pesto, my Mascarpone Pasta sauce or my pink sauce.

Most recently I served it up with a roasted chicken (recipe coming soon!) and made a gravy from the pan drippings. A great comforting meal, especially on a snowy day. Gnocchi is something that you can get the kids involved with if you don’t mind making a mess of your kitchen 🙂  It is fun and delicious. I have adapted this recipe from Tyler Florence to make it gluten free.

Potato Gnocchi

Amazing gluten-free potato gnocchi recipe your family will love!

Ingredients

  • 4 to 5 white potatoes
  • 1 teaspoon of salt
  • ¼ teaspoon of freshly grated nutmeg
  • Pinch of black pepper
  • ½ cup of grated parmesan
  • 1 ¾ cup of ricotta
  • ¾ cup of Cup4Cup Gluten-Free flour plus more for dusting

Instructions

  1. Make holes with fork in potatoes. Bake (about an hour in the oven at 375 degrees) or microwave (on a plate about 8 to 10 minutes). When cool enough to touch, scoop the potato out from the skins and mash with a fork. Add salt, nutmeg, pepper, parmesan and ricotta, then combine. Mix flour in ¼ cup at a time.
  2. Dust a large work space with flour. Take a handful of dough, press together and roll into a long strand, about ½ inch in diameter. Cut with pastry cutter or knife into ½ inch pieces. Lay the prongs of the fork on top of the gnocchi and gently press down and pull fork toward you rolling the gnocchi. Place the gnocchi on a sheet pan topped with parchment paper or waxed paper. Repeat until you have used all the dough.
  3. Bring about 8 cups of water to a boil in a large soup pot. Add some salt to the water (about 1 tablespoon). Drop in a handful of gnocchi at a time. When they float (about 2 minutes) place in your serving bowl. Repeat until all the gnocchi are cooked. Toss the gnocchi with your favorite sauce.

This is a time intensive meal to prepare, but well worth it, especially if you have help with the rolling and cutting.

If you have time, this is perfect for a Valentine’s meal. If you don’t have time this week, here are some other ideas for food to make for your Valentines 🙂

Swedish Meatballs

French Onion Soup

Chocolate Pudding Pie

Burrata Appetizer

Make it Hawaiian

Adding pineapple to a dish can transform it to a tropical delight! My family’s love of “Hawaiian” food has grown over the years. We started with Hawaiian pizza (ham and pineapple). Then came the Hawaiian hot dogs. This is now a barbecue must have! Slice a hot dog down the middle and stuff with crushed pineapple. Wrap each hot dog with bacon and grill until bacon is cooked. Easy and delicious!

I recently rediscovered kielbasa. It is a great protein that makes a quick, easy and cheap meal! Of course, I had to make it Hawaiian 🙂

Hawaiian Kielbasa with Rice

Ingredients

1 ½ cups of rice

3 cups of broth or water

1 teaspoon onion powder

½ teaspoon of salt

¼ teaspoon of pepper

¼ teaspoon garlic powder

1 teaspoon vegetable oil

5 pieces of bacon, chopped

½ of a sweet onion, diced

2 cloves of garlic, minced

1 ½ bell peppers

1 kielbasa, diced

8 ounces of crushed pineapple

3 Tablespoons soy sauce

1 Tablespoon brown sugar

Directions

Cook the rice with the broth/water, onion powder, salt and pepper and garlic powder in your rice cooker or on the stove top. Add the oil and bacon to the pan. Stir and cook for a couple of minutes. Add onion, garlic and bell peppers. Stir and cook for a couple of minutes. Add the kielbasa and heat through. Add the pineapple, soy sauce and brown sugar, cover and cook for 5 more minutes and it will be ready to serve.

This is a perfect quick weeknight meal or even for entertaining. It would be a great meal for a certain football game on Sunday night 🙂 I’m planning on making  wings and pulled pork on gluten-free pretzel rolls (from one of my favorite sources, Gluten Free on a Shoestring) along with some carrots and hummus and maybe guacamole. What are you making? Making anything “Hawaiian”?

Guacamole, Dip and more Superbowl Ideas, oh my!

As many of you know I am not the biggest football fan 😉  I enjoy cheering local teams though and since I live less than 20 minutes from Gillette Stadium (and shop at the Trader Joe’s in its shadow!), I am looking forward to next Sunday!  I always love a chance to cook, so here are some recipes and ideas for your Superbowl Sunday feast.

This is my favorite Guacamole recipe! Use it on its own to dip your favorite tortilla chips into or add it to a layer dip. You’ll see my idea for a layer dip below.

Guacamole

Ingredients

2 – 3 avocados (depends on size, 2 large or 3 small)

Juice of 1/2 a lime

1/2 teaspoon salt

1/4 teaspoon cumin

1/8 teaspoon of black pepper

4 Tablespoons finely chopped tomatoes

2 Tablespoons of minced red onion

1 handful of cilantro, chopped finely

Directions

Add avocado, lime, salt, cumin and pepper to a medium sized bowl. Mash together with a fork. Add tomatoes, onion and cilantro. Mix together. Add more lime juice if needed on top to keep guacamole from browning.

If you want to make a layered dip, here is an idea:

Take a can of black beans and mash with a fork and place on the bottom of your serving dish.  Place a layer of the guacamole. Take 8 ounces of sour cream and mix with 1 teaspoon of chili powder. Add that as the next layer. Top with 1 cup of shredded cheddar, cilantro, chopped olives and chopped tomatoes. Let sit in fridge for 2- 24 hours. Serve with your favorite tortilla chips or add it to a tortilla with some shredded chicken or pork.

Dip, chips, wings, meatballs, ribs, chili, pulled pork, Rainbow pizza or grilled pizza…you name it! There are so many options for your football feast. Desserts? Make these Chex Crispy Bars, Ice cream sundaes, brownies or cupcakes and frost with chocolate frosting and then pipe white frosting to look like laces. Simply having chocolate chip cookies or a bowl of M & Ms or rolos or hershey kisses would be plenty!

What are you having Sunday night for the Superbowl?

Gluten-Free Buttermilk Biscuits

That’s right. Buttermilk biscuits that are gluten-free! These are so good and so satisfying. They can be covered with butter and your favorite jam or your favorite sausage gravy. Fill them with some pulled pork for a fun dinner or game day snack. I topped them with leftover swedish meatballs for a twist on biscuits and gravy. The options are endless.

I have adapted this recipe from Southern Living. I had a subscription for a long time and loved every recipe I made from  it and now from one of the many cookbooks I have acquired since then. This is from an online recipe. You can find the original recipe from which I drew inspiration here.

Buttermilk Biscuits

Ingredients

2 cups plus more for dusting, all purpose gluten-free flour (I used Cup4Cup Gluten-Free Flour)

1 teaspoon baking powder

½ teaspoon baking soda

¾ teaspoon salt

8 Tablespoons unsalted butter, diced and cold

1 ¼ cup buttermilk

Directions

Preheat oven to 400 degrees. Whisk together all ingredients except for butter and buttermilk. Add butter and press together with fingers until the size of peas or a little smaller or use a pastry cutter to combine. Add the buttermilk and mix until it holds together. Transfer onto cutting board and knead together for a minute. Add flour as needed. Flatten out or roll out to about ¾ of an inch. Use your favorite biscuit cutter or cup to make the circles. Add to a buttered cast iron skillet. Bake for 25-30 minutes.

Please let me know if you try this! Would love to hear good or bad how they turn out at your house!

Sweet Potato Two Ways

Sweet potatoes can be a great side dish or the star of the meal. They can be fancy or very simple. They can be baked, topped with marshmallows, made into fries or create an amazing soup.

This sweet potato side dish is the perfect comfort food on a cold winter night.

Sweet Potato Gratin

Ingredients

3 large sweet potatoes, thinly sliced

1/3 cup of unsalted butter

1/3 cup flour (I use Gluten-Free Cup4Cup)

1 teaspoon of dijon mustard

1 teaspoon of salt

¼ teaspoon of pepper

3 springs of thyme

3 cups of milk

4 ounces of cream cheese or 3 tablespoons of mascarpone

12 ounces of shredded cheddar, divided, save about 4 ounces for the top

Directions

Boil slices of sweet potatoes for about 10 to 15 minutes. Drain and set aside. Make béchamel: melt butter, add flour, mustard and herbs. Whisk for 2-3 minutes. Whisk milk in. Add cream cheese and combine. Take off heat and mix in cheddar. Make layers, one of potatoes, one béchamel and repeat. Cover top with rest of cheddar and bake at 400 degrees for 20 minutes. Broil for 2 minutes if you want to melt the cheese more. If you have extra béchamel sauce, freeze it and add it to quinoa or rice another time.

Serve at Valentines day with a grilled steak or barbecued salmon and a fresh salad.

I love to be able to create more than one meal out of the same ingredient. Especially one that completely hides the fact that I’m using leftovers. That way it is more likely that my family will eat it 🙂

Sweet potato and zucchini enchiladas

Ingredients

4-6 tortillas (I like to use Joseph’s gluten free flour tortillas)

1 1/2 to 2 cups of leftover sweet potato gratin

1 large zucchini, shredded

4 ounces of shredded cheddar

chili powder

1 to 1 1/2 cups of tomatillo salsa or your favorite enchilada sauce

Directions

Preheat oven to 300. In a casserole dish, pour tomatillo salsa or enchilada sauce to cover the bottom. In each tortilla place 3 to 4 Tablespoons of the gratin, 1 Tablespoon of the shredded zucchini and sprinkle with chili powder (about 1/8 to 1/4 teaspoon), roll and place in dish.

Repeat until you have used up your ingredients.

Pour more of the enchilada sauce over all the rolled tortillas. Top with shredded cheddar.

Cover and bake for 20 minutes. Remove cover and bake another 15 minutes. Broil for 2 minutes at the end if you would like to melt the cheese any further.

The enchiladas would make a great meal for the Super Bowl next weekend! If you haven’t made the gratin, just substitute some mashed sweet potatoes and add some shredded cheddar inside the tortillas.

I’ll be posting more ideas for Valentine’s Day and the Super Bowl over the next couple of weeks. Stay tuned!
