Sheet Pan Shrimp

All over the internet you see sheet pan dinners. They are the new one pot meal.  I have three sheet pans and they are well loved. I use them to cook wings, meatballs, shrimp, salmon, roast vegetables and not to mention all the cookies we make on them.

I usually make sure I have a bag of frozen shrimp in the freezer so that I can throw together a quick and easy meal. This is one of the simplest and tastiest recipes you can make.

Sheet Pan Shrimp

Ingredients

1 pound cooked frozen shrimp, defrosted

Juice of 1 lime

½ teaspoon of salt

Pinch of ground black pepper

1 teaspoon of agave

½ cup of diced red onion

1 to 2 diced sweet peppers (or broccoli)

2 teaspoons vegetable oil

½ teaspoon of salt

1/8 teaspoon of ground black pepper

Directions

Preheat oven to 375 degrees. In a medium bowl mix lime, salt, pepper and agave. Toss shrimp in the lime mixture and let sit while you prepare the remaining ingredients. Combine onion and vegetables on sheet pan with vegetable oil, salt and pepper and cook for 10 minutes. Remove from oven and add the cooked shrimp. Roast for another 10 minutes and serve over rice or polenta or inside a tortilla.

You can easily make this recipe solely with vegetables so it is easy to make this vegetarian, vegan and its already gluten free! It is such a versatile recipe! Let me know what you like to make on your sheet pans.

3 Easy 10 Minute Meals

The election is now behind us and whoever you voted for, we can all agree its time to move forward! Now we can occupy our brains with the holidays instead! Which unfortunately for many can be just as stressful, especially when you cannot rely on take out. I, like many of you have a endless list of things to do: keep the children alive and fed, go to school meetings, do laundry, clean, pay bills, juggle all the activities, work and do more laundry, so I completely understand that dinner needs to be done in 10 minutes time most nights. Especially with the holidays coming, our time is even more limited. These are three of my go to super fast recipes for when dinner needs to be on the table ASAP and hopefully help keep your stress levels down!

Kielbasa and Peppers with Mashed Sweet Potatoes

Ingredients

1 Tablespoon of olive oil

1 Turkey kielbasa (make sure it is GF if you need it to be), diced

1 red pepper, diced

1 green pepper, diced

1 package of already made mashed sweet potatoes (I like Wegman’s) or a couple of large sweet potatoes

Directions

Heat your cast iron skillet (or sauté pan) over medium heat with the olive oil in it. Once hot, add kielbasa and peppers, stirring occasionally. Cook for about 5-7 minutes. While that is cooking follow the instructions on your mashed sweet potatoes (or just microwave a couple of sweet potatoes-remember to poke holes with a fork!- and serve with a little butter, salt and pepper). You can either leave out the kielbasa for a vegetarian meal or substitute leftover turkey, chicken, steak or your favorite already cooked sausage.

Asian noodles are always a hit in my house and are a great option for an easy weeknight meal. Healthy, tasty and a great alternative to take-out.

Asian noodles with shrimp and broccoli

Ingredients

1 package of Maifun Rice Sticks or your favorite noodles (GF if you need them to be)

1 pound of shrimp (frozen or fresh, even faster if already cooked!)

1 head of broccoli, roughly chopped

1/3 cup soy sauce

1/3 cup rice vinegar

¼ teaspoon fish sauce, optional

¼ teaspoon sesame oil

2 teaspoons of ginger (either this stir-in paste from Gourmet Garden or minced fresh)

1 clove of garlic, minced

1 teaspoon onion powder

3 Tablespoons lime juice

4 Tablespoons brown sugar

Directions

Cook noodles according to package. Add the broccoli to noodles with 3 minutes left in cook time. Drain all. Mix the soy sauce, vinegar and rest of the ingredients in a large bowl. Toss noodles and broccoli with sauce. Toss in cooked, peeled shrimp and its ready to serve. I serve it with fresh cilantro, chopped peanuts and a couple splashes of siracha. A squeeze of lime juice is also a great way to finish the dish.

If shrimp are fresh or thawed and not cooked, this can still be a quick meal, as long as they are cleaned and deveined! Here is a quick delicious way to cook them. Mix 1/8 cup vegetable oil, splash of sesame oil, 4 cloves of garlic – minced and juice of ½ a lime. Toss with the shrimp and cook for 3 to 4 minutes each side in a 400 degree oven. Cool, peel and toss with noodles.

This dish is extremely versatile. It would also be great with, zoodles (zucchini noodles), rice or cauliflower rice in place of the noodles. You can easily substitute tofu, scrambled egg, leftover chicken, steak or even turkey from Thanksgiving. It is good hot, room temperature and cold.

Having these jack-of-all trade meals in your back pocket will make dinner easier to make with what you have on hand.

Pasta with Pink Sauce

Ingredients

1-16 once package of spaghetti or your favorite pasta (gluten free of course if you need it to be)

1 jar of pasta sauce (or one 15 ounce can of tomato sauce)

4 ounces (1/2 block) of cream cheese

Directions

Cook pasta according to package. While water is boiling, pour pasta sauce into sauce pan and heat on medium. Add cream cheese and stir until combined. It will be clumpy. While pasta is cooking pour pink sauce into a large serving bowl and then add drained pasta. Stir and serve.

This is a great base to add whatever cooked vegetables, leftover turkey, chicken or shrimp if you like. I recently made this and served steamed green beans on the side. Stop and Shop steam in the bag green beans. My husband liked them more than when I buy green beans, clean them and steam or roast. Lesson learned! I don’t need to exert the energy!

Ginger Citrus Shrimp with summer squash, zucchini and rice

Something about the spring makes me crave light refreshing shrimp dishes. This one is so simple and you can make your own version of it with whatever seafood or chicken, pork or vegetables that you have on hand. You can make it with rice, noodles, or as filling for a lettuce wrap.

Marinade: about 1/4 cup rice wine vinegar(you can use white wine, white balsamic, champagne vinegar or the leftover white vinegar you bought for dying Easter eggs plus add a couple teaspoons of sugar), 1/8 cup vegetable oil, a drop or 2 of sesame oil (makes all the difference in any Asian dish – totally worth buying), 2 minced cloves of garlic, about 2 Tablespoons of minced fresh ginger (I peel and freeze mine when I bring it home and then use the microplane to grate it into dishes), about 2 teaspoons of sugar, salt and pepper to your taste and 1/2 of an onion-minced.

Add uncooked shrimp to the marinade ( or pre cooked and then you just don’t have to cook it in the pan as long). Let sit for about 10-15 minutes.

Make rice or noodles while you wait. I swear by my rice cooker.

Dice other half of onion, mince a clove of garlic and a Tablespoon of minced ginger. On a cookie sheet, toss with chopped zucchini and yellow squash (or asparagus or some peas, or whatever veggie you like) and some vegetable oil with a drop of sesame oil, salt and pepper. Roast about 30 minutes at 400 degrees.

Cook shrimp in sauté pan with melted butter and a little of the marinade until pink and cooked through. Serve with rice and veggies! Top with some chopped cilantro and green onions if you would like.

Spring is in the air, cook fast and get out of the kitchen!

Spring is in the air and we have been spending as much time as possible outside trying to enjoy it! (Sorry to those in Seattle who are dealing with snow!) While we are enjoying the outdoors, I let my slow cooker do the cooking and use some go to items for quick meals that can be made at the last minute.

I have been trying to find a delicious easy way to make polenta from scratch. I’ve bought the premade tubes and mashed them up with milk and butter, bought the quick cooking polenta, which are both good, but not as good as using corn meal and mixing it by hand for a long time. Today I had an epiphany — make it in the slow cooker! So I did. I just googled slow cooker and polenta and found this recipe. It worked great and was delicious!! I served it with some sausages and leftover roasted butternut squash. I had promised Karina she could have carrots and cottage cheese too before I remembered about the leftover squash, so she got both! and ate both! Win win 🙂

 I took a couple of ladles full of the hot polenta and put it in a small square tupperware dish in the fridge to cool for about 15 minutes while I grilled the sausage and microwaved the squash. when the polenta was cool, I cut a Mickey Mouse shape out with a cookie cutter.

The boys didn’t eat too much tonight, a little overtired from all the outdoor fun, but they usually like it 🙂
Last night I made perogies, peas and shrimp, which only took about 10 minutes! This was a hit with 4 out of 5 of us. Neil didn’t eat much other than the peas 🙂 I try to keep frozen perogies and peas in the freezer, along with something like shrimp that can easily be thawed. I cooked the shrimp in a little olive oil and then once they were pink on a sides, added 1 clove minced garlic and some leftover honey mustard lemon vinaigrette.  [Honey mustard lemon vinaigrette – olive oil, lemon juice, white balsamic vinegar, Dijon mustard, salt, lemon pepper and sugar. I tossed a spinach salad with it over the weekend]

Easy Entertaining and Introducing….Ask Mamma!

In another attempt to improve my blog, I would like to make it more interactive. As much as I love cooking, I love talking with people about cooking and sharing ideas. So this is the launch of Ask Mamma! I will post questions and answers for everyone to read (keeping you anonymous, unless you want me to include your name and/or blog)! We all have our own ways of cooking, so someone’s boring every Wednesday night meal, is someone else’s new discovery!

This past week I got a question from a reader about what to make for her son’s 4th birthday party at their house (kids and adults present).

Mamma’s Answer

Making a dinner or lunch party for young kids…Here are three options:

(1) Mexican

Pasta salad – fun shapes for kids or the tri colored (I made one for the boys’ birthday party + added black beans, corn, tomatoes and feta and a mild honey lime vinaigrette). Cook 1 box of pasta, cool and then toss in a can of black beans (rinsed), about a cup and 1/2 of corn (use frozen, canned or fresh), about a cup and a 1/2 of diced tomatoes and about 3/4 cup of feta. To make the vinaigrette add equal parts (about a 1/3 of a cup) lime juice, white balsamic (or white wine vinegar) and olive oil. Whisk together. Then add 2-3 Tablespoons honey (or sugar if kids under 1 are going to be eating it), taste and add more sugar or honey if not sweet enough. If too sweet add a little more vinegar. Add salt and pepper to your taste, whisk all together and then toss with pasta.

Make your own taco bar – have peppers + onions at room temperature, either chicken or beef (I also did this for the boys’ party and made a beef roast in the slow cooker the day before and then just shredded it and reheated it for the day of the party), shredded cheese, salsa and tortillas. Let people build it themselves. To make the shredded beef or chicken, rub with salt, pepper, coriander, cumin and oregano. Sear meat in pan, then transfer to crock pot with 2-3 cups of beef or chicken stock flavored with coriander, cumin and oregano and keep on low until meat is cooked through (use a meat thermometer!). Once cooled, use a fork to shred meat.

Chips and salsa and guacamole for snacking.

Super simple. Make as much as you want or buy already made 🙂

(2) Greek

Meatloaf with greek seasoning (McCormicks make’s a great one) and feta (Rachel Ray has a great recipe that I wrote about here). I actually made this the other night but made meatballs instead of meatloaf. So good!

Tomato, cucumber and feta salad (onion optional). Dice a couple of vine ripe tomatoes, one cucumber and throw in a couple of handfuls of feta. Mix with a couple of splashes of red wine vinegar, olive oil, salt and pepper. If you like raw onion, dice about 1/2 a medium onion and add in as well. I’m not a big raw onion fan, so I only diced 1/4 of a medium onion.

Yogurt sauce (make or buy). To make, add yogurt, minced cucumber, greek seasoning and a little lemon juice).

Serve with pita bread.
hummus, pita chips, carrots, cucumber, etc for snacking.

(3) Asian

Shrimp and pork lettuce wraps – Marinate cooked shrimp (I used frozen shrimp that had been thawed) + cooked pork or beef (grill or just cook with salt and pepper) + shredded carrots + shredded slaw (I buy pre-shredded) in a mixture of rice wine vinegar, white balsamic, sugar, lemon juice, ginger and olive oil. Marinate separately for at least an hour. (Can cook it all the day before and then just let it marinate starting in the morning of the party and serve room temp)

Serve with lettuce for lettuce wraps and I LOVE the Trader Joe’s Sweet Chili sauce for dipping. So good!


Coconut rice on the side with edamame if you like. Here is a good recipe I found on a blog I recently discovered, Weelicious.

All of these ideas can be made the day before, leaving you with less to do on the day of the party and may actually allow you to enjoy the party instead of being stuck in the kitchen!

Foodie with a toddler…

I have finally been carving out some time to cook! Most of it has been on the grill (no pots and pans!). I also am getting creative with my lunches and food throughout the day. Eating quickly and sometimes with one hand are preferable, but I want to eat fresh and healthy. Today I had a caprese salad, goldfish crackers and some blueberries. Definitely a meal worthy of a foodie with a toddler (hence the title) 🙂

Quick, little clean up, easy meals are important right now. Here’s what I’ve been cooking:


Grilled sirloin (salt, pepper), peas (frozen – made in microwave), grilled polenta cakes (premade polenta rolls, sliced, rubbed with olive oil and sprinkled with shredded parmesan, all topped with a dollop of sour cream and chopped chives. [modified version of recipe I saw on Seattle PI or Seattle Times online]. This is the adult version.

Here is the toddler version. Karina wasn’t too impressed. She loved the steak though!

This is what other members of may family had for dinner 🙂 The boys love their milk/formula!

Tonight I made some farfalle pasta with shrimp, balsamic grape tomatoes and feta. Make farfalle. Defrost frozen already cooked shrimp with tails off, squeeze fresh lemon juice over shrimp after you dry them off and salt and pepper. Cut tomatoes in half and cover in bowl with balsamic vinegar (looks prettier with white balsamic – cheap at Trader Joes) and whatever fresh herbs you have on hand. I used basil and rosemary. Toss all together with some crumbled feta. Yum! In the past I’ve added steamed broccoli and used leftover salmon instead of shrimp.

Very good and very easy. Nice for a summer’s evening with a glass of Riesling.

I keep frozen hamburger patties and hotdogs on hand so that we can grill up a quick summer favorite when we don’t have anything else. Add a salad and its a great summer meal.

I also grilled some pizzas the other night. See link for past grilled pizza recipes. This is not relaxing and was definitely pushing the boundaries of what I’m capable of and only worked because the twins decided to sleep from 5pm to 10pm. I made my regular mozzarella with sauce and basil on Trader Joe’s wheat dough. Then I made a bbq chicken pizza. In an effort for effortless cooking, we often buy the already roasted chickens at Fred Meyer and had about 1/3 of the chicken left. I shredded the chicken and mixed it with a smokey bbq sauce, molasses, honey and some brown sugar, saving some of the sauce to spread on the dough. I caramelized a shallot and sliced up the mozzarella (maybe next time I would use goat cheese). Here is the recipe I was inspired by.

Now I really should go to sleep (especially since all three kids are sleeping – which is rare!).
